Named after the protective layer that forms on the sour and funky beers we love so dearly, Pellicle is the brainchild of Matthieu, one of the new rising stars in the world of blending and fermentation. This young man is very much obsessed with lambic and all aspects of its production process, but also happens to be a huge wine geek. With his blends, he loves to blur the lines between beer and wine and shows that one plus one can be three. Synergy, baby!
