Fermenterie des Champs Marmo
Chris Gillard handed over the keys to the famous 'Mi Orge Mi Houblon' beer shop to its new owner a few years ago, after which he left the friendly south of Wallonia for the rugged mountainous landscapes of Haute-Savoie in France. But he took with him his love and knowledge of beer, as well as his passion for naturally fermented beers and kombuchas. In the midst of the magnificent nature of this region, he ferments and rests his beers, maturing them in wooden casks and experimenting with a distinct quest for sophistication. Today, a jewel hidden in the mountains, we let him come down from his mountain to BXL for a while!
